Pumpkin Bread [Video Recipe]

Today I decided to mix it up and give you a video tutorial!  I asked my dear friend Noah what kind of pumpkin dish I should make and he suggested Pumpkin Bread-so, I made pumpkin bread.  Check it out!

Here’s what you’ll need:

 

  • 1/2 Cup Brown Sugar
  • 1/2 Cup Applesauce
  • 1/4 Cup Olive Oil
  • 1 Tsp Vanilla Extract (optional, I didn’t use it in my mine!)
  • 1 Cup Pumpkin Puree
  • 1 Tsp Vanilla
  • 1/4 Cup Coconut Milk (optional, another thing I didn’t choose to use)
  • 2 Cups Whole Wheat Flour
  • 2 Tsp Baking Powder
  • 2 Tsp Baking Soda
  • 1 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
Instructions:
Preheat oven to 375.

In a medium-sized bowl, combine sugar, applesauce and olive oil.  Then add pumpkin puree (and vanilla extract if you choose to use)

In a large bowl, combine remaining dry ingredients.  Add wet ingredients into the dry ingredients and mix well.

 

Pour into a large, greased and lightly floured loaf pan.  Bake for 30-40 minutes until a toothpick comes out clean and the top is golden brown.

    fun fun fun I just made some pretty decadent pumpkin chocolate chip bread.. oohhh man. but what caught my attention was the olive oil, and wheat flour. I’ve never used olive oil to bake a bread before, only for dipping .. perhaps i’ll give this recipe a try.

    Oh yeah, I use olive oil in a lot of things that I bake- I’m not sure how much of a difference it makes but I do it anyways. 😛 I will definitely be using the wheat flour again too!
