I am just loving the idea of packing salads in Mason Jars for lunch! Sure, you can layer the basic salad in a number of different ways, but using the same ingredients gets boring. I decided to spice things up with this vegetarian taco salad packed with both protein and fiber!

- Refried Beans
- Baby Spinach
- Mozzarella Cheese
- Cilantro-Lime Dressing
- Tortilla Chips
What is so great about this dip is that you can literally pick any of the ingredients that you love, and put in as much as you’d like.
- Layer the ingredients in your Mason Jar as desired. I did Cilantro-Lime Dressing, Cucumbers, Beans, Tomato, Kale, Baby Spinach, Avocado, and then Cheese.
- Secure lid, and store in the fridge for up to five days. Enjoy with a container of tortilla chips, or crumble the tortilla chips on top.
