Layered Vegetarian Taco Salad

I am just loving the idea of packing salads in Mason Jars for lunch!  Sure, you can layer the basic salad in a number of different ways, but using the same ingredients gets boring.  I decided to spice things up with this vegetarian taco salad packed with both protein and fiber!
Yield: 1 Serving
Cook Time: 15-20 Minutes

Calories per serving: ~450

Ingredients:

  • Cucumber
  • Refried Beans
  • Tomato
  • Kale
  • Baby Spinach
  • Avocado
  • Mozzarella Cheese
  • Cilantro-Lime Dressing
  • Tortilla Chips

What is so great about this dip is that you can literally pick any of the ingredients that you love, and put in as much as you’d like.

Directions:

  • Layer the ingredients in your Mason Jar as desired.  I did Cilantro-Lime Dressing, Cucumbers, Beans, Tomato, Kale, Baby Spinach, Avocado, and then Cheese.
  • Secure lid, and store in the fridge for up to five days.  Enjoy with a container of tortilla chips, or crumble the tortilla chips on top.
